Usually, fresh lemon curd is made with just the egg yolks but my homemade lemon curd recipe uses whole eggs and Meyer lemons because that is what we grow (regular fresh lemons work great in it too).

When you’re making several batches it’s hard to use up a ton of leftover egg whites, so whole egg lemon curd is perfect when you want to make a bunch for the freezer.
