
We’ve had a very busy week around here….it’s performance week for our homeschool drama club. This will officially bring our 2014-2015 school year to a close. Oh, we still do math and reading throughout the summer but all of our outside of the house classes and activities are done for a few months. It’s a good feeling.
While we were making some granola bars on Tuesday morning to take to a 5 hour drama practice, I realized that I have never shared our chewy granola bar recipe with you. I’m so sorry. These things are so good that we made three batches and by Wednesday morning they were all gone.
The beauty of this recipe is that you can mix and match ingredients depending on what your family likes. These also freeze really well, so I often make three or four batches at once and freeze them for later.
Chewy, No-Bake, Granola Bars

Ingredients
- 2/3 cups nut butter (I use peanut butter, if you use almond butter or sunbutter you will probably need to add a little oil to it)
- 1/2 cup honey
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 3/4 cups rolled oats
- 2 1/2 cups puffed rice cereal
- 1/4 cup ground flax seeds
- 1 cup mix ins - shredded coconut, sunflower, sesame, hemp or chia seeds, chopped nuts, dried fruit, chocolate chips, etc
Instructions
Mix rolled oats, rice cereal, flax seed and mix ins in a large bowl.
In a sauce pan mix honey, brown sugar and salt. Heat over medium heat until mixture comes to a full boil for 30 seconds. Stir continuously.
Remove from heat and add in peanut butter and vanilla. Mix well.
Pour liquid over dry ingredients and mix well.
After it's mixed, press into a 9X13 pan and let cool.
Once cooled, cut into bars.
Enjoy!

Oh. My. Goodness. I have been searching far and wide for a good granola bar recipe. I’ve tried a ton. I’m trying this today! It looks amazing! And you don’t have to bake it? Yes please. When you freeze it, do you pat it into the pan, cut it to bars and store in bags? Or another way? Thanks
Yes, I pat it into the pan, let it cool and then cut them and freeze them in bags. Hope you enjoy them!
I made these for the first time today. I was worried they would be too sweet but they are perfect! Great flavor and nice and chewy.
